TABER CORN, CORN MASH SPIRIT
Taber corn is at the heart of this whisky, Alberta’s sweet golden grain that’s the best in the world. It’s the reason this whisky has such rich, corn-forward character. Inspired by American tradition but made entirely with Canadian ingredients and process, Taber Corn whisky is Bridgeland’s way of distilling a classic style in our own way.
Still: Custom-designed traditional Copper Pot Still
Base: 60% Taber Corn, 32% Penhold Barley, 8% Penhold Wheat
Distillation: Small-batch, 2x distilled
Oak Barrels: New America Oak, Char#4
Without additives, colouring or chill filtration.
Nose:
Toasted marshmallow and sun-dried hay lead into bright red fruit notes of cherry and raspberry. Layers of maple, demerara sugar, cinnamon, and buttery florentine cookies add sweetness, while violet florals and a hint of charred oak smoke bring depth.
Palate:
Warm and comforting, with toasted banana bread, vanilla, and cedar. Strawberry gummies and marmalade provide a playful fruitiness, while marzipan and honey add richness.
Finish:
Nutty and gently sweet, lingering with toasted almonds, maple sugar, and soft oak spice.
