SPOLUMBO’S AMARO
What do you get when 5 Calgary food entrepreneurs meet at Spolumbo’s regularly? A Calgary amaro hearkening to Italian heritage made with a secret blend of aromatic herbs and roots, foraged as locally as possible. Made to be sipped before or after dinner (or as a secret ingredient in a complex cocktail), it’s sweet, warming, and just a little bitter.

Base: 100% California grapes
Distillation: Small-batch, 3x distilled
Infused with 18 Aromatic Herbs and Roots
Nose:
Aromatic and spice-driven, led by black licorice and cardamom, with layers of chai spice unfolding alongside dried citrus peel and soft caramel. Lavender adds a floral lift, while dates and a subtle red berry note round out the sweetness with depth.
Palate:
Bittersweet and structured, with gentian and licorice forming the backbone. Herbal notes weave through warming chai spices, balanced by a rich, date-like sweetness. Hints of cola emerge mid-palate, adding a familiar yet complex layer.
Finish:
Long and warming. Cardamom and chai spices linger over bitter roots, with a gentle sweetness carrying through the close.
