INNISFAIL WHISKY, CANADIAN SINGLE POT STILL
Named for the Alberta town whose Celtic name means “Isle of Destiny,” this whisky honours the Irish farming families like the Hamills, who grow the grain for this spirit. Triple distilled and aged in a mix of casks, Innisfail Single Pot Whisky is Bridgeland’s prairie take on a classic style.

Base: 58% Penhold Malted Barley, 30% Penhold Raw Barley, 12% Penhold Malted Oats
Distillation: Small-batch, 3x distilled
Without additives, colouring or chill filtration.
Nose:
A generous, fruit-led opening of ripe peach and apricot, layered with banana bread and softly spiced pear. Honeyed sweetness runs throughout, lifting notes of cinnamon, honeycomb, and confectionary bonbons, while a light grassy freshness keeps the profile bright and composed.
Palate:
Clean and fruit-driven, with banana and angel food cake setting a soft, airy texture. Strawberry and cream and dried apricot add richness, balanced by a subtle iced tea note and almond nuttiness. Gentle wood spice builds through clove and cinnamon, bringing structure without overshadowing the fruit.
Finish:
Tea-like tannins tighten the sweetness, with white pepper, vanilla, and honey lingering in a clean, balanced close.
