EAU DE VIGNE, GRAPPOLO BIANCO
For years, Italians abroad would make their own homemade versions of Pomace brandy to remind them of home. Bridgeland Distillery honours this tradition, with our “water of the vine,” fermenting and slowly distilling the skins of grapes to capture all the essence of the fruit. Great sipped neat or added to espresso for an Italian pick-me-up.
Still: Custom-designed traditional Copper Pot Still
Base: St-Hubertus Gewurztraminer & Pinot Blanc grape skins
Distillation: Small-batch, 2x distilled
Without additives or chill filtration.
Nose:
Fresh grass and white florals lead, followed by lemon zest and a soft marshmallow sweetness. Light nuttiness and a subtle resinous edge add complexity. Aromatic and pisco-like in style.
Palate:
Grapefruit and pine tip up front, with jasmine, geranium, and chamomile layered over black tea and marshmallow. Apricot kernel and licorice root bring a gentle bitterness, supported by a faint waxy-resinous note.
Finish:
Honeysuckle and citrus peel linger alongside fresh pine needle in a clean, lifted finish.
