CANADIAN BAIJIU
Our Canadian Baijiu began as a limited release for Lunar New Year and quickly became a distinctive staple. This is our prairie take on the most consumed spirit in the world, that’s strong, smooth, and layered with nutty sweetness and a pronounced character from fresh Alberta grain. Try Baiju as a base for a cocktail that breaks away from the expected or, more traditionally, slowly sipped with dinner.
Still: Custom-designed traditional Copper Pot Still
Base: 60% Taber Corn, 32% Penhold Malted Barley, 8% Penhold Wheat
Distillation: Small-batch, 2x distilled
Without additives or chill filtration.
Nose:
Toasted grain and yeasty bread evoke freshly baked beer bread, followed by cinnamon, browned apple, and fresh apricot. Sesame and subtle herbs add an intriguing savoury dimension.
Palate:
Remarkably viscous and creamy with jasmine rice, vanilla, and yellow apple. Floral notes lift the palate while black pepper and toasted sesame provide a savoury edge.
Finish:
Long and mouth-watering with creamy vanilla, toasted grain, and a savoury-sweet echo.
